WHITE COLD CUT PORK WITH GARLIC
SAUCE
 
If you wish to know the special dish of Szechwan cooking, this is a sensational for buffet or as a cold plate for banquets

3 lb. pork loin with bone
12 c. water
1 cucumber, sliced thin

SAUCE:

3 tbsp. garlic, finely minced
2 tbsp. sesame seed oil
3/4 c. light soy sauce
1 tbsp. lemon juice

Put pork in wok. Cover with water. Bring to boil. Cover. Simmer for 1 1/2 hours. Cool to room temperature. Slice very thin. Arrange on platter. Arrange a layer of cucumbers on top. Combine sauce ingredients. Mix well. Pour sauce over pork and cucumbers or serve separately as a dip.
