CHEDDAR-SQUASH CASSEROLE | |
6 c. sliced yellow squash 1 c. sour cream 2 beaten egg yolks 2 tbsp. flour 2 stiffly beaten egg whites 1 1/2 c. shredded Cheddar 1/3 c. bread crumbs 1 tbsp. melted butter Steam squash until tender, about 15 minutes. Mix sour cream, egg yolks and flour; fold in whites. In a baking dish, layer half the squash, then half the egg mix and half the cheese; repeat. Combine bread crumbs and butter; sprinkle on top. Bake uncovered at 350 degrees for 20-25 minutes./ |
