LIME CHEESECAKE PIE 
1 (8 oz.) pkg. low-cal cream cheese, softened
1 c. skim Ricotta cheese
15 packets Equal
1/2 c. skim milk
1 lime peel, grated
Juice of 1 lime (1/4 c.)
1 env. unflavored gelatin
2 packets low-cal whipped topping mix
1 c. skim milk

Blend together cream cheese and Ricotta cheese. Add Equal, 1/2 cup skim milk and grated lime peel. Blend until smooth. In small saucepan, sprinkle gelatin over lime juice. Let stand 1 minute; heat until gelatin dissolves. Set aside. Prepare whipped topping with skim milk instead of water. Add gelatin mixture to cheese mixture and gelatin mixture. Tint green. Pour into chocolate crumb crust, bought or scratch or use spring-form pan. Sprinkle with chocolate sprinkles or shaved candy bar. ONLY USE EQUAL. Chill about 1 hour before serving.
