BAKED COD ALMOND BEER | |
Cod fillets 2 per person 1/2 can beer 1 stick butter Lemon juice Sliced almonds Melt 1/4 stick of butter, add one ounce of beer and one ounce of lemon juice in a coffee cup for basting. Use the remaining butter to coat the entire inside of a glass baking pan. After coating the pan pour in the remaining beer. Place individual fillets in pan. Place in oven at 325 degrees. Once butter melts in pan, apply first basting coat of beer, juice and butter on top of the fillets. Bake for five more minutes and baste again. Add almond slices to the top of the fillets. Continue to bake until fish is flaky. Dab basting sauce on fillets to keep them from drying out. Recipe is also good on orange roughy and perch. |
