BAKED COD CREOLE 
1 lb. cod fillets
1 tbsp. butter
1/4 c. chopped green pepper
1 stalk celery, chopped
1 med. onion, chopped
1 tbsp. sugar
1/4 tsp. basil
1/4 tsp. oregano
8 oz. can stewed tomatoes
1/4 tsp. pepper

Saute pepper, onion and celery in butter; add tomatoes and seasonings. Pour over fish in a buttered pan and bake 25 minutes at 350 degrees.

As a bachelor I am always trying different recipes to liven up my meals. I saw this and gave it a try. I made one little change to the recipe. I used chopped serrano peppers instead of sweet green peppers and served it over lightly buttered ramen noodles.. The serranos offset the sweetness of the sugar and tomatoes in the dish and the buttered noodles were an excellent compliment to the other ingredients. My cudos to the chef for this recipe.

This is one of the tastiest cod recipes ever. Even if you don't like fish, you will like this. Pour it over rice, or mashed potatoes, and you have a fantastic fish meal.
