BAKED COD 
1 lb. cod fillets, cut in 2 inch pieces
4 med. potatoes, peeled and sliced 1/4 inch thick
4 med. carrots, scraped, cut into 2 inch pieces
1 tbsp. lemon juice
1 tbsp. butter
Ground pepper to taste
1/2 c. shredded Mozzarella cheese
1 onion, sliced into rings

Spray 13 x 9 inch pan with Pam. Put fish pieces into dish and sprinkle with lemon juice. Place carrots, potatoes, onions in and around fish. Place dabs of butter on top. Season with pepper. Sprinkle cheese over all. Cover. Bake at 370 degrees for 40-60 minutes (until potatoes are done). Serves 4.
