IRISH STEAK SAUCE 
1 (15 oz.) can Guinness Draught
1 cup (2 sticks) butter
1 cup chopped onion
2 garlic cloves
rosemary and thyme
2 cups beef stock
few drops balsamic vinegar
few drops oyster sauce
salt and pepper
cornstarch (optional)

Roughly chop onion, garlic, rosemary and thyme. Heat saucepan. Add butter, onions and garlic and sauté. Add whole can of Guinness and an equal measure of beef stock, a few drops of balsamic vinegar and a few drops of oyster sauce. Bring to a boil.

Strain the sauce and put back on stove. Add rosemary, thyme and season with salt pepper. To thicken sauce add cornstarch and stir.

Store unused portion, covered, in refrigerator.
