MOUNTAIN SPOON BREAD 
1 c. hot water
1 c. cornmeal
2 tbsp. shortening
1 tsp. salt
1 tbsp. sugar
1/2 tsp. baking soda
1 c. buttermilk
2 eggs, well beaten

Mix 1 cup hot water to 1 cup cornmeal. Stir well. Add shortening; salt and sugar. Dissolve soda in buttermilk and add to mixture. Add eggs last. Bake 30-40 minutes at 375 degrees. Spoon hot from pan to serve.
