PORTUGUESE RICE | |
1/2 c. chopped onion 1 green or red pepper, chopped 1/2 lb. linguica (Portuguese sausage) (bacon may be substituted) Saute this on top of stove with enough olive oil to cover bottom of small roasting pan. When onions are clear add: 1 small can tomato sauce and enough water to make 3 cups. Stir well and let this come to a boil. Add salt, pepper and oregano. When it boils add 1 cup uncooked rice. Cover pan and place in oven at 350 degrees for about 20 minutes. |
