FRIED RICE WITH TOFU | |
Have ready: 2 c. cooked rice 1 lg. onion, sliced 1 green pepper, sliced 2 ribs celery, sliced 1/2 lb. tofu, diced (may substitute chicken or lean beef strips) 2 green onions, cut in 1/2 inch pieces In skillet or wok heat: 2 tbsp. oil Add and stir fry for 1 minute: Tofu cubes 1 tbsp. soy sauce Remove tofu and stir fry for 3-4 minutes: 2 tbsp. oil Onion sliced Green pepper slices Celery slices Crumble in: The cooked rice Add: 1 tbsp. soy sauce Cooked tofu cubes Stir fry until hot. Serve sprinkled with: Chopped green onion Toasted cashews (optional) |
