CAROLINE'S CHICKEN PASTA | |
1 (16 oz.) pkg. penne pasta 1 large boneless chicken breast, cut into chunks 1 tsp. olive oil 1 large onion, chopped finely 1 (12 oz.) can tomato sauce 2 garlic cloves 1 zucchini, cut into chunks 1 red or green pepper, cut up 1 tbsp. oregano 1 tsp. cilantro Cook pasta according to package directions. Meanwhile, in a large pot add olive oil and cook chicken. Once chicken is cooked add chopped onion and cook until white. Add tomato sauce, garlic, zucchini and red or green peppers and let cook until done. Sprinkle oregano and cilantro. Serve over drained pasta. Enjoy. Submitted by: Caroline |
