EASY RICE PUDDING (Microwaves) 
1 c. quick-cooking rice
1 (3 3/4 oz.) pkg. vanilla pudding mix
1/2 tsp. cinnamon (optional)
1/4 tsp. salt
3 c. milk
1/2 c. raisins (optional)
Nutmeg (optional)

Combine rice, pudding mix, cinnamon and salt in 2 1/2 to 3 quart casserole. Stir in milk gradually.

Cook in Radarange Oven, covered, on Cookmatic Level 8 for 7 to 9 minutes, or until mixture begins to boil. Stir halfway through cooking time with wire whip.

Stir in raisins. Sprinkle with nutmeg, as desired. Serve warm or chilled.

MICRO-TIP: Try French vanilla pudding for a richer flavor.

Since microwave ovens vary in power, you may need to adjust your cooking time.
