EASY RICE PUDDING 
1 c. quick-cooking rice
1 (3 oz.) pkg. vanilla pudding mix
1/2 tsp. cinnamon
1/4 tsp. salt
3 c. milk
1/2 c. raisins or more

Combine rice pudding, cinnamon, and salt in 2 1/2 quart casserole. Stir in milk gradually. Cook in microwave, covered for 7-11 minutes. Stir halfway cooking time, with wire whip. Stir in raisins, sprinkle with nutmeg. Serve warm or chilled.

Since microwave ovens vary in power, you may need to adjust your cooking time.
