ROASTED POTATO FANS | |
10 med. potatoes 12 tbsp. butter 1 tsp. salt 1/2 tsp. basil 1/2 tsp. marjoram leaves 1/4 to 1/2 tsp. pepper Peel potatoes. With sharp knife, cut each potato crosswise into 1/4 inch slices, being careful to cut each slice only 3/4 of the way through the potato. In a 13 x 9 inch baking pan in 400 degree oven, melt butter. Arrange potatoes, cut side up in pan; brush with melted butter; sprinkle with salt, basil, marjoram and pepper. Bake 1 hour or until potatoes are golden and slices fan out, occasionally brushing potatoes with butter in pan. Can be reheated in microwave oven. 10 servings. |
