BROCCOLI-CHEESE CASSEROLE 
1 c. cooked rice
1 lg. onion, chopped
1 can cream of chicken soup
1/2 stick butter
1/2 lb. Velveeta cheese, diced
2 pkgs. chopped broccoli
1/2 can (lg.) evaporated milk
Chicken pieces may be added (optional)

Cook rice - brown onion in butter. Mix soup, cheese and milk. Add to rice and onion. Add broccoli. Bake in greased pan until lightly brown and bubbly, 325 degrees for 1 hour. Serves 6.
