DLK'S KRAUT CASSEROLE (EASY,
QUICK AND CHEAP!)
 
Simple, cheap and quick to prepare! I often make this the night before when I know I have a busy day the next day and keep the casserole dish in the refrigerator, take it out when I get home, cook it and voila, fast filling yummy supper.

1 small kielbasa
1 medium sweet white (or red Spanish) onion
6 or 7 slices lean bacon (turkey bacon is also fine)
1 (15 oz.) can sauerkraut, drained and rinsed
1 (15 oz.) can diced tomatoes (Italian style)
instant mashed potatoes (you can make fresh but for this recipe instant works great and is fast and cheap)

Prep: 10 minutes. Cooking: 30 minutes in oven or 4-5 hours on LOW in Crock-Pot.

Cut up kielbasa (thin slices or diced chunks). Dice onion. Cook bacon normally (let stand and get crisp).

Put small amount of oil in fry pan. Throw in kielbasa and onion. Onion cooked until golden, brown kielbasa lightly. Drain and rinse kraut. Add tomatoes and meats and onion.

If you really want the flavors to sink in good, throw this all in a Crock-Pot for half a day. Otherwise you can mix as is.

Prepare a package of instant mashed potatoes. Fill bottom of a casserole dish with potatoes, top with mixture. Put in oven at 350°F for about 30 minutes to warm and cook through.

This is very nice topped with cheese. I am partial to Swiss but I used Gouda last time and it was also great! Grate enough to cover the top before putting the casserole into the oven.
