GINGERBREAD MUFFINS | |
1/2 c. butter 1/2 c. sugar 2 eggs 1/2 c. molasses 1/2 c. sour cream 2 c. flour 1 tsp. baking soda 1 tsp. ginger 1/4 tsp. allspice 1/4 tsp. cinnamon 1/2 tsp. lemon rind 1/2 c. raisins dredged in flour Preheat oven to 375 degrees. Cream butter and sugar in a large mixing bowl. Add eggs, one at a time, beating well after each one. Stir in molasses and sour cream. Sift together the next 5 ingredients and add to creamed mixture. Stir in raisins. Turn into greased muffin tin and bake 20-25 minutes. Serve warm with butter or cream cheese. |
