MEXICAN CASSEROLE 
1 lb. ground beef
1 c. sour cream
2/3 c. mayonnaise
1 c. shredded sharp Cheddar cheese
2 tbsp. chopped onion
2 c. Bisquick mix (can use 1 c. Bisquick and 1 c. corn meal)
1/2 c. cold water
2-3 c. chopped pepper
2-3 medium tomatoes

Preheat oven to 375 degrees. Cook and stir ground beef until brown; drain and set aside. Mix sour cream, mayonnaise, cheese, and onion; set aside. Stir baking mix and water to a soft dough. Pat dough into a greased 9 x 13 inch pan, pressing dough 1/2 inch up the sides of pan. Layer beef, tomatoes, and pepper; spoon sour cream mixture over top. Bake 25-30 minutes or until edges of dough are light brown.
