APRICOT-PINEAPPLE-CHEESE DELIGHT
SALAD
 
1 lg. can apricots, well drained & cut up
Miniature marshmallows
1 lg. can crushed pineapple, drained
1 lg. pkg. orange Jello
2 c. boiling water
1 c. juice from fruits

TOPPING:

1/2 c. sugar
1 egg
2 tbsp. butter
Grated cheddar cheese
1 tbsp. flour
1 c. juice from drained fruits
1 c. cream, whipped (not Cool Whip)

Dissolve Jello in water and stir in 1 cup of the juice. Chill until congealed slightly and add drained fruits and about 1 cup of miniature marshmallows. Chill in 9"x13" pan or mold until firm.

TOPPING: Mix sugar and flour together, add egg slightly beaten. Slowly stir in 1 cup juice from drained fruits. Cook until thickened, stirring constantly. Add the butter and chill. Whip 1 cup of cream and fold into cooked, but chilled mixture and spread over Jello. Sprinkle top with grated cheddar cheese.

NOTE: This topping is delicious with any kind of fruit salad.
