HASH BROWN POTATOES 
3 c. raw, diced potatoes
1/2 tsp. salt
3 tbsp. fat
1 medium onion, chopped
1/8 tsp. pepper

Mix potatoes, onion, salt, and pepper. Heat fat in skillet. Spread potato mixture in skillet; flatten with broad spatula. Saute over low heat until bottom is brown. Turn whole cake in one piece, if possible, or 2 halves. Brown again. Serve hot.
