MICROWAVE PEANUT BRITTLE | |
1 c. sugar 1/2 c. light corn syrup 2 tbsp. butter (1/4 stick) 1 tsp. vanilla 1 tsp. baking soda Line 10 x 15 inch jelly roll pan with foil. Generously butter foil. Combine sugar and corn syrup in deep 2 quart glass bowl. Cook on high 5 minutes; remove from microwave. Stir in peanuts, butter, and vanilla (with wooden spoon). Return to microwave and cook on high 5 minutes. Remove and stir. Add soda and beat hard for a few minutes. Pour on buttered foil and spread thin and evenly. Refrigerate 10 minutes, then finish cooling at room temperature. Turn out on wax paper, peel any foil off, and break into small pieces. Store in air- tight container. |
