MICROWAVE PEANUT BRITTLE 
1 c. sugar
1/2 c. light corn syrup

In 1 1/2 quart casserole, stir together and microwave for 4 minutes.

Stir in peanuts, microwave 7 to 9 minutes. 1 tsp. vanilla

Add butter and vanilla to syrup, blend well, microwave 1 minute. Add 1 teaspoon baking soda and gently stir until light and foamy.

Pour mixture into greased cookie sheet or unbuttered non-stick coated cookie sheet. Let cool 1/2 to 1 hour. When cool, break into small pieces and store in airtight container. Makes 1 pound.

Since microwave ovens vary in power, you may need to adjust your cooking time.
