PEANUT BRITTLE MICROWAVE 
1 c. sugar
1/2 c. white corn syrup
1 c. roasted salted peanuts
1 tsp. butter
1 tsp. baking soda
1 tsp. vanilla

In 1 1/2 quart casserole dish, stir together the sugar and syrup. Microwave at high for 4 minutes. Add peanuts and microwave at high for 3 to 5 minutes or until light brown. Add butter and vanilla to syrup; blend well. Microwave at high 1 to 2 minutes more. Peanuts will be lightly browned and syrup hot. Add soda and stir until light and foamy. Pour onto lightly greased cookie sheet. Let cool for 1/2 to 1 hour. When cool, break into pieces. Store in airtight container.

Since microwave ovens vary in power, you may need to adjust your cooking time.
