MEXICAN MEAT LOAF 
1 lb. ground meat
1/2 lg. onion, chopped
1 can cream of mushroom soup
1 (8 oz.) can tomato sauce
8 oz. picante sauce
1 c. cooked rice
1/2 lb. shredded cheddar cheese
1 lg. bag tortilla chips
Salt & pepper to taste

Brown ground meat and onions. In a Dutch oven mix meat, onion, soup, tomato sauce, picante sauce and rice. Mix and simmer, stirring frequently for 5 minutes. Add salt and pepper to taste. In a large (9"x12") pan cover bottom with crushed tortilla chips. Sprinkle 1/2 of shredded cheese over chips add meat mixture. Add another layer of crushed tortillas and cheese. Top off with remaining cheese, melt cheese in oven; bake at 350 degrees for 20 minutes.
