HOLIDAY NUT ROLL | |
2 c. brown sugar, firmly packed 1 c. granulated sugar 1 tbsp. corn syrup 1/8 tsp. salt 1 c. evaporated milk 1 1/2 c. chopped nuts 1/4 c. each candied cherries, citron Combine sugar, corn syrup, salt and milk in saucepan. Bring to boil and cook without stirring until a small amount of mixture dropped in cold water forms a soft ball (236 degrees F on candy thermometer). Remove from heat and let stand until lukewarm. Beat until thick and loses its gloss. Add 1/2 cup nuts and fruits. Shape into long roll (2 1/2 inches in diameter). Roll in remaining nuts. Wrap in damp cloth and let stand until cool. Don't let harden too much before cutting in slices. Wrap slices individually in cellophane, plastic, or wax paper for storing. |
