COCONUT MACAROONS 
2 egg whites
1/2 tsp vanilla flavoring
dash of salt
2/3 cup of sugar
3/4 cup coconut

Preheat oven to 325°F.

Add vanilla flavoring and dash of salt to egg whites. Beat this until the eggs form foamy peaks. Add sugar and beat again until it forms stiffer peaks. Fold in coconut.

Drop by teaspoon onto greased cookie sheet. Bake about 20 minutes or until soft golden brown.
