LEMON FILLING 
2 tbsp. flour
3 eggs
rind and juice of 4 lemons, grate finely
2 c. sugar
1 1/2 sticks butter

Place all ingredients, except flour and eggs, in pan. Cook over low heat until butter melts and sugar dissolves. Remove from heat; stir vigorously. Add flour and slightly beaten eggs. Return to low heat and cook until mixture coats back of spoon.

This recipe will ice a 4-layer cake.
