BRUNCH EGGS 
3 slices bacon - fry, cool & crumble
3 or 4 lg. eggs
1 c. milk 1 (12 oz.) pkg. hash browns or O'Brien potatoes - thaw
1/2 to 3/4 c. shredded cheese (your choice)

Fry bacon night before and crumble. Thaw potatoes. Grease shallow baking pan. Beat together eggs, milk and half of the cheese. Put in greased pan in layers: thawed hash brown potatoes (salt and pepper to your taste), beaten egg mixture, crumbled bacon, and remainder of cheese on top. Bake at 375 degrees for 35 to 40 minutes.
