LEMON BARS 
1 c. butter, room temp.
1/4 tsp. salt
2 1/4 c. flour
1/2 c. confectioners' sugar
2 c. sugar
Grated zest of 1 lemon
6 tbsp. lemon juice (1/3 c.)
4 eggs, beaten

Mix butter, salt, 2 cups flour and confectioners' sugar. Press firmly into a 9"x13" pan. Bake 15 to 20 minutes at 350 degrees until golden brown at the edges.

Gradually add the sugar, grated lemon zest and lemon juice to the beaten eggs. Sift remaining 1/4 cup flour and fold in gently. Pour onto slightly cooled crust. Return to 350 degree oven and bake 20 to 25 minutes longer (possibly 30 minutes).

Remove from oven, sprinkle with extra confectioners' sugar. Cool, cut into bars. They will be rather soft.
