HAM QUICHE 
1 1/4 c. flour
Pinch of salt
3 tbsp. butter
3 tbsp. shortening
3-4 tbsp. water

FILLING:

1 1/2 lbs. cooked ham, cubed
4 eggs
1 1/2 c. half and half
2 tbsp. melted butter
Pinch of parsley
1 c. grated Swiss cheese
1 tbsp. flour
Pinch of salt
Pinch of pepper
Pinch of thyme

Crust: Sift flour and salt together. Cut butter and shortening into the flour. Add water and mix with a fork and then with your fingers until the dough can be gathered into a ball. Wrap the dough in wax paper and chill in the refrigerator for 1 hour. Roll out into quiche dish or 9 inch pie plate. Bake 7 minutes. Prick crust and bake 5 more minutes. Fill.

Scatter the ham and cheese over the bottom of the pastry shell. Beat rest of ingredients together with a wire whisk until blended. Pour over ham and cheese. Bake at 375 degrees for 45 minutes or until a knife inserted comes out clean.
