COTTAGE CHEESE CAKE 
2 eggs, separated
1 c. skim milk
1/2 c. low calorie sweetener - granulated
2 env. unflavored gelatin
1/4 tsp. salt
3 tbsp. lemon juice
1 1/2 tsp. grated orange peel
1 tsp. vanilla
3 c. diet creamed cottage cheese
1 c. undiluted evaporated milk (chilled)

In a small bowl, beat egg yolks slightly. Beat in skim milk. In top of double boiler, mix granulated sweetener, gelatin and salt. Stir in egg yolks mixture; cook over simmering water, stirring constantly until gelatin dissolved and mixture coats the spoon (about 5 minutes). Pour into large bowl. Stir in gelatin mixture until blended. In small bowl beat egg whites to (peak) stage. In another small bowl evaporated milk and remaining lemon juice until stiff. Fold egg whites and milk into cheese mixture. Refrigerate until firm. Garnish with strawberries. Serves 10. 137 calories a serving.
