PRALINES - NEW ORLEANS STYLE | |
3 c. sugar 1 tsp. baking soda 1/8 tsp. salt 3/4 c. white Karo syrup 1 c. buttermilk 2 tbsp. butter 2 c. pecan halves In a large pot, combine sugar, soda and salt. Stir in corn syrup and buttermilk. Bring to a boil over medium heat, stirring constantly. Cook and stir to soft boil stage, 234 degrees. Remove from heat; add butter. Stir in pecans and beat until mixture is thick enough to drop from spoon (5-6 minutes). Quickly drop onto waxed paper. If candy becomes too stiff, add 1 teaspoon hot water. Makes about 45 pralines. |
