IN FROM THE SNOW CASSEROLE 
1 lb. ground beef
2 (8 oz.) cans tomato sauce
1/4 c. chopped onion
1 tsp. crushed basil
1 tsp. parsley flakes
3/4 tsp. salt
1/2 tsp. oregano
1/4 tsp. pepper
2 (10 oz.) pkg. frozen chopped spinach, cooked and drained
1 pt. cream style cottage cheese
8 oz. Mozzarella cheese

In skillet, brown ground beef slightly. Pour off fat. Stir in tomato sauce, onion, basil, parsley, 1/2 teaspoon salt, oregano, and pepper. Simmer, uncovered, 10 minutes, stirring occasionally. Combine spinach, cottage cheese, and 1/4 teaspoon salt. Spoon spinach around edge of 12 x 8 baking dish. Pour beef mixture in middle. Top with sliced Mozzarella. Bake at 375 degrees for 20-25 minutes. Serves 6.
