ALMOND-PEACH YOGURT 
2 med. peaches (about 6 oz. each), blanched, peeled, and pitted
1 c. plain low-fat yogurt
2 amaretti cookies (1/2 oz.), crushed, divided
1 tsp. honey
1/4 tsp. ground cinnamon
1/2 oz. sliced almonds

Chop 1 peach and slice remaining peach. In small mixing bowl combine chopped peach, yogurt, half of the cookie crumbs, the honey, and cinnamon; stir. Into each of two 6 ounce dessert dishes arrange 1/4 of the peach slices; top each with half of the yogurt mixture and the remaining peach slices. Sprinkle each portion with remaining cookie crumbs and the almonds. Cover and refrigerate until ready to serve. Makes 2 servings.
