HELEN'S SQUASH CASSEROLE 
3 lbs. yellow squash, sliced
2 onions, chopped
3 carrots, sliced thin
2 cans cream of chicken soup
1 sm. carton sour cream
1 sm. jar pimentos, chopped
1/2 c. butter, melted
1 sm. pkg. herb seasoned stuffing

Cook vegetables until tender, in salted water, drain well. Add soup, sour cream, pimento. Blend butter and stuffing mix. Use half to cover bottom of large baking dish. Pour in vegetable mixture. Top with rest of stuffing mix. Bake at 375 degrees for 45 minutes or until done.
