CHEESE SQUASH CASSEROLE 
4 c. cooked yellow squash
1 can cream of celery soup
1 sm. jar pimentos, drained
1 or 2 sm. green onions
1 grated carrot
8 oz. Mozzarella cheese
1/2 pt. sour cream
1/2 of 8 oz. pkg. corn bread stuffing
1/2 stick butter

Melt butter and stir into stuffing mix then line bottom of baking dish (approximately 8 x 12 1/4 inch). Mix all other ingredients except cheese. Mix well and pour over stuffing in pan. Bake at 350 degrees for 45 minutes. Remove. Sprinkle Mozzarella cheese and bake 5 minutes or until cheese melts and is bubbly.
