SPAGHETTI PIE | |
6 oz. spaghetti 2 eggs, beaten 1/4 c. grated Parmesan cheese 2 tbsp. butter 1/2 c. green pepper, chopped 1/3 c. onion, chopped 1 c. sour cream 1 lb. Italian sausage 1 (6 oz.) can tomato paste 1 c. water 4 oz. Mozzarella cheese, cut in strips Break spaghetti in half and cook according to package directions; drain. While still warm, combine spaghetti with eggs and Parmesan cheese. Put spaghetti in well greased 10 inch pie plate. With back of spoon, press it up around sides of plate to form "crust". Melt butter; add green pepper and onion. Saute until onion is transparent. Add sour cream. Spoon mixture over spaghetti. Remove sausage from casing. Crumble into skillet and cook until done. Drain off grease. Add tomato paste and water to sausage, mixing well. Simmer 10 minutes. Spoon sausage mixture over sour cream. Bake at 350 degrees for 25 minutes. Arrange Mozzarella, spoke fashion on top of pie. Return to oven for cheese to melt. Serve with salad and hot rolls. |
