CARROTS ELEGANT | |
1 lb. carrots, thinly sliced 1/4 c. golden raisins 1/4 c. butter 3 tbsp. honey 1 tbsp. lemon juice 1/4 tsp. ground ginger 1/4 c. sliced unpeeled almonds Cook carrots, covered, in boiling water about 8 minutes; drain. Put carrots in 1 quart baking dish. Stir in the raisins, butter, honey, lemon juice, and ginger. Bake, uncovered, in a preheated 375 degree oven 35 minutes; stir occasionally. Spoon into serving bowl and sprinkle with almonds. Serves 4. |
