HOMEMADE MANICOTTI 
DOUGH:

3 c. flour
3 c. water
6 eggs
Pinch salt

FILLING:

3 lb. Ricotta
Salt
Pepper
Garlic powder
3 eggs
1 pkg. spinach
Romano cheese

Dough: Blend all ingredients together with electric mixer. Pour on hot griddle (teflon coated) with small laddle and swirl quickly to 43 to 5 inch in diameter. They should be thin, don't brown. Flip to other side after 1 minute or so.

Filling: Put all ingredients in bowl. Break up cheese and mix all together (looks like paste). Spread on dough circles, roll and put in pan (put little bit sauce and dilute with a little bit of water in bottom of pan). Lay manicotti in pan, cover with sauce and bake 20 minutes at 350 degrees.
