JUDI'S SPRINGTIME ORANGE CAKE 
This is a nice, moist cake for snacking or any occasion.

1/2 cup whole wheat flour
1/2 cup self-rising flour
1/4 tsp. baking powder
3/4 cup sugar
2 tsp. orange zest
1/4 cup orange juice
1/4 cup vegetable oil
1 egg
1/2 cup unsweetened apple sauce

Combine both flours with baking powder. Add sugar. Mix together and next add the zest, juice, oil, egg, and applesauce. Combine well.

Now take a small amount of softened butter and grease a glass loaf pan. Pour the batter into the pan and bake at 325°F for 45 minutes.

Note: If you use a metal pan you may increase the heat to 350°F, but see how it looks after 30 minutes. Do not overbake.
