ZUCCHINI CASSEROLE PIE 
3 c. zucchini (sliced thin, quartered)
1 c. Bisquick mix
1/2 c. chopped onion
1/2 c. Parmesan cheese
2 tbsp. parsley
1/2 tsp. salt
1/2 tsp. pepper
1/2 tsp. oregano
1/2 c. Wesson oil
4 eggs, beaten
Dash of garlic

Mix all ingredients together in large bowl. Pour into large pie dish, or casserole, or oblong glass baking dish. Bake at 350 degrees for 40 minutes or until firm (butter baking dish).

Excellent recipe. I have made it on several occasions and each time it came out delicious. I have received rave reviews from all who have tasted it. I have at times, altered the ingredients and added fresh tomato as well as cooked broccoli to be included with the required 3 cups of zucchini. It's a quick easy recipe that bakes up nicely. and tastes great!
