MEXICAN FRUIT CAKE 
1 (20 oz.) can crushed pineapple plus juice
2 c. flour
2 eggs
1 c. black walnuts
2 tsp. baking soda
1 c. sugar

Mix pineapple and juice with sugar and eggs. Then add flour and baking soda. Stir in black walnuts. Bake in greased and floured pan (9 x 13 inch) at 350 degrees for 35 minutes.

FROSTING:

3 oz. cream cheese
1 tsp. vanilla
2 c. powdered sugar
1 stick melted butter

Mix cream cheese and melted butter together. Then add powdered sugar and vanilla. This will be kind of runny. Pour frosting on warm cake. Rich and delicious!
