OATMEAL-CHOCOLATE SANDWICHES 
1 1/2 c. (3 sticks) butter, softened
1 c. sugar
1/4 c. orange-flavored liqueur or orange juice
3 c. Quaker oats (quick or old fashioned), uncooked
2 c. all-purpose flour
1 (12 oz.) pkg. (2 c.) Nestle Toll House semi-sweet chocolate morsels or butterscotch morsels
2 tbsp. vegetable shortening

Preheat oven to 350 degrees. Beat butter and sugar until light and fluffy. Blend in juice or liqueur. Add combined Quaker oats and flour, mixing well; refrigerate 10 minutes. Shape into 1-inch balls. Place on ungreased cookie sheet. Press into 2-inch circles. Bake 10 to 12 minutes or until edges are golden brown. Remove from cookie sheet and cool completely.

Combine chocolate or butterscotch and shortening in microwave-safe bowl. Microwave on high 1 minute; stir. Microwave 1 minute longer. Stir until smooth. Spread 2 teaspoons chocolate or butterscotch on the flat side of half the cookies. Top with remaining cookies. Drizzle with remaining chocolate or butterscotch. Refrigerate 10 minutes. Store, tightly covered, in a cool, dry place. Makes about 2 1/2 dozen.

Or combine chocolate and shortening in heavy saucepan over low heat, stirring until smooth.

Since microwave ovens vary in power, you may need to adjust your cooking time.
