ZUCCHINI QUICHE 
4 c. zucchini, thinly sliced
1 c. onion, chopped
2 cloves garlic
3 tbsp. butter
1/2 c. parsley
3/4 tsp. basil
1/2 tsp. oregano
2 eggs
1 1/2 c. Mozzarella, shredded
1 c. cream or milk

Saute onion, garlic and zucchini in butter. Stir in other ingredients, adding cream last. Pour into crust and bake at 375 degrees or until set and golden brown.

CRUST:

4 oz. cream cheese
1/2 c. butter
2 tbsp. cream or water
1 1/2 c. flour

Mix all ingredients well. Roll out and place in pie pan. Bake shell at 450 degrees for 5 to 7 minutes before filling is added.
