PEANUT BRITTLE | |
1 c. white sugar 1/4 c. water 1/2 c. light corn syrup 1/4 tsp. salt 2 c. raw shelled peanuts 1 tbsp. butter 1/4 tsp. vanilla 1/2 tbsp. baking soda Greased baking sheet Combine sugar, water, syrup, and salt in heavy 2 quart stainless steel (important) saucepan and bring to a full boil on high heat. Add peanuts and reduce heat to medium and cook to a temperature of 292 degrees on candy thermometer. Add butter and vanilla and stir. Good candy will depend on how quickly you do the next step. Add 1/2 tablespoon baking soda. Stir mixture quickly and pour on greased cookie sheet while foam is still forming. Do not smooth out, but let candy flow to its own level. Cool, break and eat. |
