CHIMICHANGAS 
1 lb. ground beef with chopped onion
1 pkg. taco seasoning mix
3 c. chopped lettuce
2 c. grated cheese
1 (10 oz.) can Ro-Tel
10-12 flour tortillas
1 diced tomato
Sour cream and hot sauce

Brown meat with onions, drain. Stir in Ro-Tel and taco mix. Simmer 5 minutes. Spoon meat mixture into flour tortillas. Fold over edges (envelope style). Roll up and pin with toothpicks.
