PEANUT BRITTLE 
2 c. white sugar
1 c. light corn syrup
1/2 c. water
2 c. blanched peanuts
2 tbsp. butter
1 tsp. vanilla
1 1/4 tsp. baking soda

Mix sugar, syrup, and water. Cook and stir until candy thermometer reaches soft-ball stage. Add next 3 ingredients and cook to hard crack stage, stirring constantly. Remove from heat and add soda. Stir and pour into well greased 11 x 17 inch pan.
