ZUCCHINI BREAD 
3 c. flour
2 eggs
2 c. sugar
1/2 c. salad oil
1 scant tsp. baking soda
2 tsp. baking powder
1 tsp. cinnamon
1 tsp. nutmeg
1 tsp. vanilla
2 c. peeled, seeded and grated zucchini squash
1 c. raisins or dates
1 c. walnuts

Bake at 350 degrees for about 1 hour. Makes 2 loaves.
