FLORENCE SYMER'S ZUCCHINI BREAD 
3 eggs
1 c. oil
1 1/2 c. sugar
2 c. unpeeled, grated zucchini (drained)
3 c. flour
2 tsp. cinnamon
1 tsp. salt
1 tsp. baking powder
1 tsp. baking soda
1 c. chopped nuts
Raisins or dates, optional

Beat eggs and gradually add oil and sugar. Add zucchini and gradually all other ingredients. Fold in nuts. Pour into well greased loaf pans and bake for 1 hour at 350 degrees. Cool 10 minutes before removing from pans. Freezes well.
