SPINACH AND MEATBALL SOUP 
1 pkg. frozen spinach
1 lg. can chicken broth
1/2 c. instant rice
1/2 lb. ground beef
1/2 c. seasoned stuffing mix
1/4 tsp. pepper
1 egg

Mix ground beef, stuffing mix, egg and pepper. Form into tiny meatballs; brown in skillet. Bring broth to a boil. Add spinach and rice; reduce heat and simmer for 15 minutes. Add meatballs and simmer for 30 minutes. Serve with oyster crackers.
